What is chawanmushi?

Chawanmushi is a Japanese steamed egg custard served in a small cup, eaten with a spoon. Beaten egg is loosened with dashi stock and seasoned with light soy and mirin, then steamed slowly so it sets into a soft, just-firm custard rather than a solid omelette. Little treasures hide inside, and the result is comforting, umami-rich and elegant all at once. Our Japanese chefs control the steam carefully to keep the surface glassy and free of bubbles.
