Our tempura platter (tempura moriawase) is an assortment of crisp, golden-fried prawn and seasonal vegetables, served the way a Japanese kitchen intends — light, lacy and shatteringly crisp on the outside, tender within. Built on the omakase heritage behind Sushijiro Catering, this tempura platter is one of the most universally loved additions to any spread, equally at home on a corporate buffet line or a celebratory party table.
What is a tempura moriawase?
Moriawase simply means “assortment.” A tempura moriawase brings together different ingredients fried in the same delicate batter so guests can enjoy variety in a single serving. The hallmark of good tempura is the batter: ice-cold, barely mixed, and fried in clean oil at the right temperature so it stays airy rather than heavy or greasy. Our Japanese culinary team prepares each piece to that standard from our central kitchen.
What goes into our tempura platter
Each platter balances seafood and vegetables for colour, texture and flavour. A typical assortment includes:
- Whole prawn (ebi) tempura, butterflied for a straight, elegant shape
- Sweet potato and pumpkin slices, naturally sweet and fluffy inside
- Eggplant, French bean and shiitake mushroom
- Shishito or capsicum for a bright, mild note
- Tentsuyu dipping sauce with grated daikon, plus a wedge of lemon
How we serve the tempura platter for catering
We fry tempura to be served fresh, so timing and format matter. We offer it as a buffet add-on on our Japanese buffet line, as a shared platter for grazing, or as a hot component within a mini buffet for smaller gatherings. For sit-down formats, individual portions can be plated alongside rice and other sides. Platter sizes typically scale from around 8 pieces for small groups up to large trays for 30 or more guests — your final headcount and format are confirmed in the quote. We deliver islandwide, including the CBD and Marina Bay.
What to pair with a tempura platter
Tempura is a natural partner to cooler, raw dishes. It sits beautifully next to a sushi and sashimi platter, balancing the crisp-fried texture against fresh fish. Pair it with chawanmushi and miso soup for a complete Japanese set, or serve it as a hot canape at a canape and live station event. Browse the full menu to build a spread around it.
Dietary notes for our tempura platter
All tempura is prepared in our strictly No Pork, No Lard kitchen. Please note we are not halal-certified. The batter contains wheat and egg, and the platter includes shellfish (prawn), so do flag any allergies when you enquire. A vegetable-only assortment can be arranged for vegetarian guests — just let us know your numbers.
