How our chicken katsu is made
Our Japanese culinary team prepares each cutlet to order in the central kitchen. The process:
- Chicken thigh or breast pounded to an even thickness for uniform cooking
- A three-stage dredge through flour, egg and Japanese panko
- Fried in clean oil at the right temperature for a pale-gold, non-greasy crust
- Rested, sliced into strips, and paired with our house katsu sauce
