Teriyaki refers to a Japanese grilling technique where protein is cooked and finished with a tare glaze of soy, mirin, sake and a touch of sugar. The result is a lacquered, mahogany-coloured surface with deep umami. We use juicy thigh meat rather than dry breast so each piece stays moist even after delivery across the island.
