What gyoza are

Gyoza are Japanese pan-fried dumplings, adapted from the Chinese jiaozi but with a thinner wrapper, finer mince and a signature cooking method known as yaki. The dumplings are seared on one side, then steamed in the same pan so the base turns crackly-crisp while the top stays soft and pleated.

How our gyoza are made

Because our kitchen is strictly No Pork, No Lard, we fill our gyoza with seasoned minced chicken rather than the traditional pork. Our Japanese culinary team prepares them with:

  • Minced chicken blended with cabbage, garlic chives, ginger and sesame
  • Thin wheat wrappers pleated by hand for the classic crescent shape
  • A pan-fry-and-steam finish for the crisp base and tender top
  • A house ponzu or soy-vinegar dipping sauce on the side

How we serve gyoza for catering

Gyoza shine as a shared bite. On a platter they are arranged with the dip for easy grazing; in a buffet they sit in a warming tray; in a bento they make a satisfying side alongside rice and a main. What to pair with gyoza
