What is unagi nigiri?
Unagi is freshwater eel that has been filleted, grilled and brushed repeatedly with a soy-based sweet sauce until it develops a deep, savoury-sweet shine. Placed over vinegared rice as nigiri, it delivers a soft, almost melting texture with a smoky char and a delicate sweetness. Our chefs press each rice base by hand and finish the eel under heat so the glaze is warm and fragrant when it reaches your guests.
